Outstanding

Although quick enough for a hectic weeknight, this dish will impress guests. Serve with salad and roasted potatoes.

Yield: 4 servings (serving size: 1 fillet)

Ingredients

  • 1/2  cup  orange marmalade
  • 1  tablespoon  Dijon mustard
  • 1/2  teaspoon  garlic powder
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  black pepper
  • 1/8  teaspoon  ground ginger
  • 4  (6-ounce) salmon fillets
  • Cooking spray

Preparation

Preheat broiler.

Combine first 6 ingredients in a small bowl, stirring well. Place fish on a jelly-roll pan coated with cooking spray. Brush half of marmalade mixture over fish; broil 6 minutes. Brush fish with remaining marmalade mixture; broil for 2 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.

Delicious! Made with a stone ground white wine mustard left over from a holiday gift basket as that's what I had on hand. Didn't use all of the glaze and it was wonderful and super easy. My husband does not like salmon but I made it anyway as he needs to improve his diet and he said he really liked it. I served it with couscous, roasted brussel sprouts and baked sweet potatoes. Will make again!02/06/10

I tried this for the first time. I think I would agree with one of the other reviewers and not add more glaze after six minutes. It came out too orangey. I will try again and possibly add more dijon mustard, garlic pwdr and ginger.07/18/09
