Ingredients

  • 1  cup  tomato juice
  • 1  cup  pineapple juice
  • 1/2  cup  chopped peeled mango
  • 1/2  cup  chopped peeled papaya
  • 1/2  cup  chopped fresh pineapple
  • 1/2  cup  chopped seeded peeled cucumber
  • 1/4  cup  chopped green bell pepper
  • 1/4  cup  chopped red bell pepper
  • 2  tablespoons  minced fresh cilantro
  • 1/4  teaspoon  salt
  • 1/2  to 1 teaspoon hot sauce

Preparation

Combine all the ingredients in a food processor or blender, and pulse 4 times or until combined. Cover and chill.

Truly outstanding. This gazpacho has a light fruity taste, yet still retains the taste of vegetables that you would expect in a gazpacho. I substituted spicy V-8 for the tomato juice and omitted the hot sauce. Worked perfectly. I also made a double batch, and am glad - I know there won't be many leftovers! I will be serving this to guests in Florida, and I know they will love the tropical fruit flavors.06/22/09

Delicious and refreshing! This gazpacho is so yummy and different, especially on a hot summer day. It has a nice mix of sweet and spicy. I used my food processor to make the cutting and chopping easier.01/04/04
