Yield: 32 crostini

Ingredients

  • 1  tablespoon  olive oil
  • 2/3  cup  coarsely chopped green onions
  • 2  garlic cloves
  • 1/4  to 1/2 teaspoon crushed red pepper
  • 2  cups  chopped cooked turkey (about 10 ounces)
  • 1/2  cup  coarsely chopped water chestnuts
  • 2  tablespoons  light mayonnaise
  • 3/4  teaspoon  Cajun seasoning
  • 8  (1/2-inch) pieces crystallized ginger or 1/2 teaspoon ground ginger
  • 2  tablespoons  white wine vinegar
  • 1  tablespoon  low-sodium soy sauce
  • 32  (1/4-inch-thick) slices French bread baguette (about 1 loaf)

Preparation

Heat oil in a large nonstick skillet over medium-high heat. Add onions, garlic, and pepper; sauté 1 minute. Place onion mixture, turkey, and next 6 ingredients (turkey through soy sauce) in a food processor; process until well-blended, scraping sides of processor bowl occasionally. Spoon pâté into a bowl; cover and chill at least 8 hours.

Spread 1 tablespoon pâté evenly over each bread slice.

Very pleasing to the palate with a nice aroma. I cooked the turkey with chix broth and white wine for added subtle flavor. I had to add more mayo when processing for a better consistency. I made this for someone's party. It was a big hit and well enjoyed by everyone. Besides the baguette I also served with cocktail rye bread for added flavor. Very easy to make, good for as a spread or quick snack.03/01/05
