Yield: Makes about 4 cups. (serving size: 1 tablespoon)

Ingredients

  • 2  cups  ketchup
  • 1/2  cup  molasses
  • 1/2  cup  granulated sugar
  • 1/2  cup  brown sugar (firmly packed)
  • 1/4  cup  lemon juice
  • 1/4  cup  cider vinegar
  • 2  tablespoons  Worcestershire
  • 2  tablespoons  ground dried ancho chiles (or regular chili powder)
  • 2  teaspoons  ground ginger
  • 2  tablespoons  Herb spice rub
  • 1  cup  meat juices or beef broth
  • salt

Preparation

1. In a 2- to 2 1/2-quart pan, combine ketchup, molasses, granulated sugar, brown sugar, lemon juice, cider vinegar, Worcestershire, ground dried ancho chiles (or regular chili powder), ground ginger, and the herb spice rub. Simmer, uncovered, over medium-low heat, stirring occasionally, until mixture is thick and reduced to about 3 cups and flavors are well blended, 20 to 25 minutes.

2. Add meat juices (supplement with beef broth if you have less than 1 cup, or use all beef broth) and salt to taste. Serve warm or cool.
