Prep: 25 min., Cook: 20 min.

Yield: Makes 4 servings

Ingredients

  • 12  ounces  uncooked spaghetti
  • 4  garlic cloves, minced
  • 1  tablespoon  olive oil
  • 3  pounds  plum tomatoes, seeded and chopped
  • 2  teaspoons  sugar
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  freshly ground pepper
  • 1  tablespoon  chopped fresh mint leaves
  • 1/4  cup  grated Parmesan or Romano cheese

Preparation

Cook spaghetti according to package directions, omitting salt and oil. Drain and set aside.

Sauté garlic in hot oil in a large skillet over medium-high heat 1 minute. Add tomatoes, and cook, stirring occasionally, 12 to 15 minutes or until sauce is thickened and chunky. Remove from heat, and stir in sugar, salt, and pepper.

Add cooked spaghetti and mint to sauce in skillet, tossing to coat. Sprinkle with cheese.
