Yield: Makes 10 servings (serving size: 1/2 cup)

Ingredients

  • 4  cups  chopped cooked chicken breast
  • 1/3  cup  light mayonnaise
  • 1/4  cup  freshly shredded Parmesan cheese
  • 2  green onions, chopped
  • 2  celery ribs, chopped
  • 2  tablespoons  chopped pecans, toasted
  • 1/4  teaspoon  pepper
  • 1/8  teaspoon  salt
  • Garnish: celery leaves

Preparation

Stir together first 8 ingredients in a large bowl. Cover and chill 2 hours. Garnish, if desired.

Note: For testing purposes only, we used BelGioioso Freshly Shredded Parmesan Cheese.

I didn't measure my chicken, but believe I used at least 4 cups if not more. I added more mayo and some sour cream - seemed a little dry. Loved the parmesan cheese dimension. Served to my girlfriends for lunch today. Will add to favorites!01/09/06
