Ingredients
- 2 pounds medium-size fresh asparagus spears, trimmed
- Vegetable cooking spray
- 1/2 cup pine nuts, toasted
- 1 plum tomato, seeded and chopped
Preparation
Spray asparagus lightly with cooking spray, and arrange asparagus in an aluminum foil-lined pan.
Bake at 425° for 7 minutes.
Sprinkle asparagus with pine nuts and tomatoes.
