Fattoush
Fattoush (fah-TOOSH) is the Middle Eastern version of bread salad, made with torn bits of pita and lots of late-summer vegetables. This version is a main dish, thanks to the addition of chicken and kidney beans.
Yield: 4 servings (serving size: 2 cups)
Ingredients
- 1/4 cup fresh lemon juice
- 2 tablespoons extravirgin olive oil
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups chopped romaine lettuce
- 2 cups shredded cooked chicken breast
- 1 1/2 cups chopped peeled cucumber
- 1 cup thinly sliced fennel bulb
- 1/3 cup thinly sliced green onions
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh flat-leaf parsley
- 2 (6-inch) pitas, torn into bite-sized pieces
- 1 (15-ounce) can kidney beans, rinsed and drained
- 1 pint cherry tomatoes, halved
Preparation
Combine first 5 ingredients in a bowl, stirring with a whisk.
Combine lettuce and the remaining ingredients in a large bowl; toss gently. Drizzle juice mixture over chicken mixture; toss to coat. Serve immediately.

This is an ok recipe, but if you're looking for fattoush, I think you'll be disappointed. I found CL's "Fattoosh Mixed Herb and Toasted Pita" salad to be much closer to the traditional Middle Eastern salad, which as far as I know includes sumac as a key component. To each his own, but I'm pretty sure this isn't 'fattoush'.11/02/08
