Worthy of a Special Occasion

Boiling the broccoli rabe helps remove some bitterness before it's sautéed in garlic-infused oil. If you like it hot, double the amount of crushed red pepper.

Yield: 6 servings (serving size: 1/2 cup)

Ingredients

  • 2  pounds  broccoli rabe (rapini), trimmed
  • 1  tablespoon  olive oil
  • 2  large garlic cloves, thinly sliced
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  freshly ground black pepper
  • 1/4  teaspoon  crushed red pepper

Preparation

Cook broccoli rabe in boiling water 6 minutes or until crisp-tender. Drain and plunge broccoli rabe into ice water; drain. Coarsely chop.

Heat oil in a large skillet over medium heat. Add garlic; cook 2 minutes, stirring constantly. Stir in broccoli rabe, salt, and peppers.

A good, solid recipe for a good, solid vegetable. Worth cooking if you are looking for something different from broccoli or spinach, but definitely has a stronger, heartier flavor. The garlic and red pepper flakes provide a nice context for the strong, slightly bitter greens. I would serve this again, perhaps with some pasta and sausage.07/09/07

If you like broccoli and you like garlic....you will love this recipe. As this veggie has a bit of a bit to it....I wouldn't go too crazy over the pepper. I would definately recommend this recipe!04/05/07
