Peppermint Frosting
Prep: 10 min. Peppermint oil, available from cake-supply stores, has an intense, highly concentrated flavor like that found in the chocolate-covered peppermint patties we used to garnish our cake.
This recipe goes with Chocolate-Mint Cake
Yield: Makes about 3 cups
Ingredients
- 1/2 cup butter, softened
- 1 (16-oz.) package powdered sugar
- 1/3 cup milk
- 1/4 teaspoon peppermint oil
Preparation
1. Beat butter at medium speed with an electric mixer until creamy; gradually add powdered sugar alternately with milk, beginning and ending with powdered sugar. Beat at low speed just until blended after each addition. Stir in peppermint oil.

I made this as part of the chocolate mint cake and it was great and super easy! I used the mint extract, not the pepper mint oil, I ran out of time and that's all they had at the grocery store. It was still nice and minty, and was not overpowering at all. Next time, I will make with the peppermint oil.12/25/07

Love this recipe. I've made it twice in the last week. for office goodies. It's a great icing for brownies. I've put coloring into it, and this time, added just a tiny bit more peppermint flavor to make it stronger. One of the easiest recipes!12/15/07
