Worthy of a Special Occasion

The bold, straightforward flavors of garlic and crushed red pepper make this classic Mediterranean broccoli dish appealing to Aaron.

Yield: 4 servings (serving size: 1 cup)

Ingredients

  • 2  teaspoons  olive oil
  • 6  cups  broccoli florets (about 1 head)
  • 1/4  teaspoon  kosher salt
  • 1/4  teaspoon  crushed red pepper
  • 3  garlic cloves, thinly sliced
  • 1/4  cup  water

Preparation

Heat olive oil in a large nonstick skillet over medium-high heat. Add broccoli, kosher salt, crushed red pepper, and sliced garlic. Sauté 2 minutes. Add 1/4 cup water. Cover, reduce heat to low, and cook for 2 minutes or until broccoli is crisp-tender.

Good recipe for a quick easy side dish for a weeknight recipe. Much quicker than steaming the broccoli and the red pepper flakes add some zing.02/04/10

I thought this was good, but I think adding the water at the end ruined (watered down) the flavors. I tried some broccoli before I added the water and it was really good. I think next time I make this I will omit the water and maybe add more oil to saute longer.01/24/10
