Pink Cucumber Salad

Yield: Makes 2 cups
Ingredients
- 1 English cucumber, peeled and thinly sliced
- 1/2 red onion, very thinly sliced
- 1/2 cup rice wine vinegar
- 3 tablespoons sugar
- 2 teaspoons salt
Preparation
Combine all ingredients in a large bowl. Cover and chill at least 1 hour.
