Worthy of a Special Occasion

Try a new twist on the usual weeknight steak dinner. Pair with steamed veggies or a side of rice.

Yield: 4 servings (serving size: 1 steak)

Ingredients

  • Cooking spray
  • 1  teaspoon  finely ground espresso
  • 1  teaspoon  light brown sugar
  • 1  teaspoon  steak seasoning (such as McCormick Grill Mates seasoning blends)
  • 4  (4-ounce) beef tenderloin steaks, trimmed (1 inch thick)

Preparation

Heat a grill pan over medium-high heat. Coat pan with cooking spray. Combine espresso, brown sugar, and seasoning in a small bowl; rub mixture evenly over both sides of steaks. Add steaks to pan; cook 4 minutes on each side or until desired degree of doneness.

These steaks were delicious. I broiled them for 6 mins each side then let them rest under foil for 6 mins and they were perfect. I paired with mashed sweet potatoes with smart balance, chicken broth, salt and pepper and balsamic roasted asparagus-found on this website (which I broiled 6min, turning once instead of roasting.) Everything paired really well and will definitely make again.01/28/10

Very good flavor BUT the unexpected result was the lovely color it gave to the steaks when cooked on the George Foreman.06/26/08
