Worthy of a Special Occasion

The yogurt sauce's cooling effect balances the heat of the chicken.

Yield: 4 servings (serving size: 2 chicken thighs, about 1/4 cup yogurt mixture, and 1/2 cup couscous)

Ingredients

  • 1  cup  uncooked couscous
  • 1  teaspoon  ground cumin
  • 1  teaspoon  ground coriander
  • 1  teaspoon  ground turmeric
  • 1/4  teaspoon  ground ginger
  • 1/4  teaspoon  ground red pepper
  • 1/2  teaspoon  salt, divided
  • 8  skinless, boneless chicken thighs (about 1 1/2 pounds)
  • Cooking spray
  • 1/4  cup  chopped fresh cilantro
  • 1  teaspoon  bottled minced garlic
  • 1  (6-ounce) carton plain fat-free yogurt
  • Cilantro sprigs (optional)

Preparation

Cook couscous according to package directions, omitting salt and fat.

Combine cumin and next 4 ingredients (through pepper) in a bowl; stir in 1/4 teaspoon salt. Sprinkle spice mixture over chicken. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.

Combine remaining 1/4 teaspoon salt, chopped cilantro, garlic, and yogurt in a bowl, stirring well. Serve with chicken and couscous. Garnish with cilantro sprigs, if desired.

I have to agree with Dr. Ashley -- the yogurt sauce was very strange in this dish. I actually added some lemon juice at the table, which I have never done before, and still didn't care for it. While it's a very easy and quick dish to make, I would consider the time better spent making something else. My husband liked it better than I did, but didn't really push for me to keep the recipe.07/31/09

I always use my own raita (yogurt) recipe, and I took the other user's tip on marinating the meat. I also took another tip to cook my Far East couscous in chicken broth - but I think it depends on if you're using plain couscous or not! Chicken broth adds a lot of saltiness to flavored couscous. In addition to the couscous, we normally have spicy peas or green salad. This is a very fast, light and flavorful Indian-style dinner, but it's not something I'd ever try to serve to my friends as Indian cuisine. I've made this chicken several times, on the occasions when I do not feel like spending all day preparing real Indian food! It's fast and easy, and very tasty.05/27/09
