Worthy of a Special Occasion

Save two breast halves from this dish to use later as a salad topping, tossed with rice noodles, or in Broccoli and Chicken Stir-Fried Rice. Serve with grilled pineapple rings.

Yield: 6 servings (serving size: 1 chicken breast half)

Ingredients

  • 1/4  cup  hoisin sauce
  • 1  tablespoon  grated peeled fresh ginger
  • 2  tablespoons  low-sodium soy sauce
  • 1  teaspoon  grated lime rind
  • 2  teaspoons  dark sesame oil
  • 1/2  teaspoon  kosher salt
  • 8  garlic cloves, minced
  • 6  (6-ounce) skinless, boneless chicken breast halves
  • Cooking spray

Preparation

Combine hoisin sauce, ginger, and next 5 ingredients (through garlic) in a large zip-top plastic bag. Add chicken to bag; seal. Marinate in refrigerator for 2 hours, turning bag occasionally.

Prepare grill.

Remove chicken from bag; discard marinade. Place chicken on grill rack coated with cooking spray, and grill for 5 minutes on each side or until chicken is done.

Outstanding!!! DO use low sodium soy sauce or it will be salty (or cut it with a bit of water..same result and cheaper) This recipe is perfect for "once a month cooking". I added the marinade to a zip lock bag with boneless chicken thighs...flattened it and froze it for 1 month. For a quick thaw, put it in a sink with tempid water for 30 minutes. I would do this one again!10/21/08

Great marinade, and the chicken was very tender. I made the marinade the night before to save time so I could put the chicken in the bag as soon as I got home from work the next day. Since some reviewers thought it was salty I used lower sodium soy sauce and omitted the salt, it was just right. Served with steamed snap peas and rice. Husband loved it, will make again and would serve to company.10/13/08
