Chilled Cucumber Soup

Yield: Makes about 8 cups
Ingredients
- 4 cucumbers, peeled, seeded, and chopped (about 3 lb.)
- 3 cups buttermilk
- 1 (8-oz.) carton plain yogurt
- 2 green onions, chopped
- 1/4 cup chopped fresh parsley
- 3 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Preparation
1. Process all ingredients, in batches, in a food processor until smooth, stopping to scrape down sides as needed. Transfer to a serving bowl; cover and chill 2 hours.
