Prep: 25 min. Assemble up to one hour ahead, cover with damp paper towels, and chill. Serve coarse-grain mustard or chutney alongside the skewers.

Yield: Makes about 60 skewers

Ingredients

  • 1/2  pound  (3/4-inch-thick) sliced smoked Virginia deli ham
  • 1  (5-oz.) blue cheese wedge
  • 1  large Gala apple, sliced
  • 1  bunch fresh watercress
  • 60  (4-inch) wood or metal skewers

Preparation

1. Cut ham into 3/4-inch cubes. Carefully break cheese into 60 small pieces. Cut apple slices into thirds.

2. Thread cheese, apple, watercress leaves, and ham onto skewers. Stand skewers upright, ham ends down, on a serving plate.

the blue cheese crumbles, make it very difficult to put on the skewer, I had to subsitute with toothpicks. The taste isn't amazing either. Too much trouble with little reward03/20/09

How would blue cheese actually adhere to a stick? I froze the blue cheese over night and the next morning it still did not work! I ended up using cheddar cubes to substitute. The watercress leaves end up tearing as well. So you basically end up with ham & cheese on a stick, very unappetizing...this should not be classified as an easy appetizer!!!12/19/08
