Sparkling Chimayó Cocktails

Created at the Restaurante Rancho de Chimayó (CHEE-my-yoh) north of Santa Fe, this drink makes use of the area's abundant apple cider.
Yield: 8 servings (serving size: 2/3 cup)
Ingredients
- 1 cup gold tequila
- 3/4 cup sparkling water, chilled
- 2 tablespoons crème de cassis (black currant-flavored liqueur)
- 2 tablespoons fresh lemon juice
- 1 (750-milliliter) bottle sparkling apple cider, chilled
Preparation
Combine all ingredients in a pitcher; stir to combine. Serve immediately.

We served this when we announced our engagement on Christmas. We used top shelf liquor and it was *fabulous*! We've served it since with less expensive liquor and it wasn't quite as good. I guess you really do get what you pay for...12/28/08

We made this cocktail for a small Christmas dinner party. When I first tasted it, I thought, "Oh, this is pretty good but nothing outstanding," as the tequila taste and apple cider seemed to predominate above all else. As our guests arrived, each had a glass and seemed to enjoy--and as the night progressed, everyone seemed to want more and more. We ended up making 3 or 4 pitchers of the drink to satisfy our guests!12/18/08
