Good, Solid Recipe

Cook this easy marmalade a few days before the party, and refrigerate (the flavor will improve). It's delicious with the Alabama Pulled Pork Sandwiches or spread on crackers. Or take a jar as a hostess gift when you're invited to someone else's party.

Yield: 24 servings (serving size: 1 1/2 teaspoons)

Ingredients

  • 1  tablespoon  butter
  • 2  cups  diced sweet onion
  • 2  teaspoons  brown sugar
  • 1/4  cup  apple cider vinegar
  • 1/4  teaspoon  dry mustard
  • Dash of kosher salt
  • Dash of ground red pepper
  • 1  bay leaf

Preparation

Melt butter in a medium nonstick skillet over medium heat. Add onion to pan; cook 20 minutes or until tender, stirring occasionally. Stir in sugar; cook 2 minutes. Add vinegar and remaining ingredients; bring to a simmer. Cook 6 minutes or until most of liquid has evaporated, stirring occasionally. Discard the bay leaf.
