Outstanding

Key limes are smaller, rounder, and more robustly flavored than the common Persian lime and often have yellow-green skin. They're perfect for this drink, but you can substitute 1/4 cup regular lime juice. Prepare the syrup a day ahead, and keep it in the fridge until you're ready to mix the cocktails. For a festive touch, sugar the rims of the glasses.

Yield: 4 servings (serving size: 3/4 cup)

Ingredients

  • 1/4  cup  sugar
  • 1/4  cup  water
  • 1  cup  club soda
  • 1  cup  unsweetened pomegranate juice
  • 1/2  cup  vodka
  • 3  tablespoons  fresh Key lime juice (about 3 limes)
  • Crushed ice
  • Key lime slices (optional)

Preparation

Combine sugar and 1/4 cup water in a small saucepan; bring to a boil. Reduce heat, and simmer 2 minutes or just until sugar dissolves. Remove from heat; cool.

Combine sugar syrup, club soda, pomegranate juice, vodka, and lime juice. Place crushed ice in a martini shaker; add about 3/4 cup pomegranate mixture. Cover and shake. Strain into a glass. Garnish with lime slice, if desired. Repeat procedure with remaining pomegranate mixture.

Another great cocktail recipe! I varied it, omitting the "simple syrup" portion (as I don't care for very sugary drinks, & rather save my calories for actual food!) & used lite cranberry juice instead of pomegranate. I also rimmed the glasses with peppermint by putting a handful of mini candy canes in my food processor until it resembled rock salt. It added a festive xmas touch and the drink was light, delicious & a hit!12/26/09

I served this for New Years Eve to folks who like a pretty cocktail but did not want something as strong as a Cosmopolitan or other martini-type drink (ie, mostly booze). They were very tasty, not too sweet (I had simple syrup on hand so just used that to taste), and very pretty (I love a pink drink). Everyone liked then, I will make again. t01/01/08
