Uniq Fruit and Lemon Marmalade

A food processor makes quick work of this mild marmalade.

This recipe goes with Uniq Fruit and Cream Cheese Tart

Yield: 2 1/2 cups (serving size: 2 tablespoons)

Ingredients

  • 2  large Uniq fruit
  • 1  lemon
  • 2  cups  sugar
  • 2  cups  water
  • 1/8  teaspoon  salt

Preparation

Carefully remove rind from Uniq fruit and lemon using a vegetable peeler, making sure to avoid white pithy part of the rind. Cut Uniq rind into julienne strips to measure 1/4 cup. Cut lemon rind into julienne strips to measure about 2 tablespoons. Peel and section Uniq fruit, discarding pithy white part of rind; set aside 4 cups Uniq fruit sections. Peel and section lemon, discarding pithy white part of rind.

Place Uniq fruit and lemon in food processor; pulse 8 times or until coarsely chopped.

Combine Uniq fruit mixture, Uniq fruit rind, lemon rind, sugar, 2 cups water, and salt in a large saucepan; bring to a boil. Reduce heat to medium, and cook 1 hour or until thick, stirring occasionally. Cool. (Mixture will continue to thicken as it cools.)

Note: Store in airtight container in refrigerator up to two weeks.
