Avocado-Mango Salsa

Prep: 20 min., Chill: 30 min. This colorful recipe is best when made no more than four hours ahead.
Yield: Makes 3 cups
Ingredients
- 1 cup diced jarred mango
- 3/4 cup diced red bell pepper
- 1/2 cup diced jicama
- 1/2 cup thinly sliced red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 avocados, diced
Preparation
1. Combine first 8 ingredients in a large bowl. Stir in salt and pepper to taste. Gently fold avocados into mango mixture. Cover and chill 30 minutes before serving.
