Italian-Style Pork

Yield: 4 servings (serving size: 1 pork chop and about 1/3 cup tomato mixture)

Ingredients

  • 4  (6-ounce) bone-in center cut pork chops (about 1/2 inch thick)
  • 2  garlic cloves, halved
  • 1  teaspoon  dried Italian seasoning
  • 1/4  teaspoon  salt
  • Cooking spray
  • 1/2  cup  grape tomatoes, halved
  • 1/2  cup  chopped bottled roasted red bell peppers
  • 1/4  cup  chopped fresh parsley
  • 2  tablespoons  capers, drained
  • 2  tablespoons  cider vinegar
  • 1/8  teaspoon  crushed red pepper

Preparation

Rub both sides of pork chops with garlic halves; sprinkle with Italian seasoning and salt. Coat pork chops with cooking spray. Place a large nonstick skillet over medium heat until hot. Add pork chops, and cook 6 minutes on each side or until done. Transfer pork to a serving platter; keep warm.

Add tomatoes and remaining 5 ingredients to pan; cook 1 minute or until thoroughly heated. Spoon over pork.
