Lemony Green Beans

Prep: 2 minutes; Cook: 5 minutes. The light lemon flavor of these fresh beans is a nice complement to roasted turkey, chicken, or pork tenderloin.
Yield: 4 servings (serving size: 1 cup)
Ingredients
- 2 tablespoons light butter
- 1 teaspoon grated lemon rind
- 2 teaspoons fresh lemon juice (about 1/2 lemon)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 cups green beans, trimmed (about 1 pound)
- 2 tablespoons water
Preparation
Place butter in a microwave-safe bowl; microwave at HIGH 20 seconds or until melted. Stir in lemon rind and next 3 ingredients. Set aside.
Place beans in a large microwave-safe bowl; add water. Cover and microwave at HIGH 3 to 4 minutes or until crisp-tender. Drain well. Toss beans with butter mixture.
