Poached Salmon with Horseradish Sauce

Yield: 4 servings (serving size: 1 fillet and 2 tablespoons sauce)

Ingredients

  • 1/4  cup  fat-free mayonnaise
  • 1/4  cup  plain fat-free yogurt
  • 2  teaspoons  prepared horseradish
  • 1 1/2  teaspoons  chopped fresh or frozen chives
  • 1 1/2  teaspoons  lemon juice
  • 4  cups  water
  • 1  teaspoon  peppercorns
  • 1  lemon, sliced
  • 1  carrot, sliced
  • 1  celery stalk sliced
  • 4  (6-ounce) salmon fillets
  • Lemon wedges (optional)
  • Fresh celery leaves (optional)

Preparation

Combine first 5 ingredients. Cover and chill.

Combine water and next 4 ingredients in a large skillet; bring to a boil over medium heat. Cover, reduce heat, and simmer 10 minutes. Add salmon to skillet; cover and simmer 10 minutes.

Remove skillet from heat; let stand, covered, 8 minutes. Remove fish from skillet. Discard liquid and vegetables.

Serve with horseradish mixture. If desired, garnish with lemon wedges and celery leaves.
