Pork-and-Black Bean Chili

Yield: 4 servings (serving size: 2 cups chili and 1 tablespoon sour cream)

Ingredients

  • 1  pound  lean boned pork loin roast
  • 1  (16-ounce) jar thick-and-chunky salsa
  • 2  (15-ounce) cans no-salt-added black beans, undrained
  • 1  cup  chopped yellow bell pepper
  • 3/4  cup  chopped onion
  • 1  teaspoon  ground cumin
  • 1  teaspoon  chili powder
  • 1  teaspoon  dried oregano
  • 1/4  cup  fat-free sour cream

Preparation

1. Trim fat from pork; cut pork into 1-inch pieces. Combine pork and next 7 ingredients in a 4-quart electric slow cooker; stir well. Cover with lid; cook on low-heat setting 8 hours or until pork is tender. Ladle chili into bowls; top with sour cream.
