Smoked Turkey Mango Salad

Mangoes are ripe and sweet when they're as soft as a ripe banana. If you can't find fresh mangoes, you can use a jar of refrigerated mango slices. Measure out 1 cup, and save the rest for another use. The grapefruit-vinegar dressing provides a delicious flavor contrast to the sweet fruit.

Yield: 4 servings (serving size: 1 1/2 cups)

Ingredients

  • 6  ounces  smoked turkey breast, cut into thin strips
  • 4  cups  thinly sliced savoy cabbage
  • 1  cup  finely chopped mango (about 1 large)
  • 1/2  cup  chopped fresh cilantro
  • 1/2  red onion, slivered
  • 3  tablespoons  grapefruit juice
  • 2  tablespoons  cider vinegar
  • 1  tablespoon  olive oil
  • 1/2  teaspoon  pepper
  • 1/4  teaspoon  salt

Preparation

1. Combine first 5 ingredients in a large bowl.

2. Combine grapefruit juice and next 4 ingredients in a small jar; cover tightly, and shake vigorously. Pour dressing over salad, and toss gently. Serve immediately.
