Spicy Shrimp Creole

Yield: 5 servings (serving size: 1 1/2 cups shrimp and 1/2 cup rice)

Ingredients

  • Olive oil-flavored cooking spray
  • 1  cup  chopped onion (about 1 medium)
  • 1  cup chopped green bell pepper (about 1 medium)
  • 1/2  teaspoon  crushed red pepper
  • 6  garlic cloves, minced
  • 2  (14 1/2-ounce) cans Cajun-style stewed tomatoes, undrained
  • 3/4  pound  peeled and deveined medium shrimp
  • 2 1/2  cups  cooked long-grain rice

Preparation

Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients; sauté until tender. Add tomatoes. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally. Add shrimp. Cover and cook 5 minutes or until shrimp are done.

To serve, spoon shrimp mixture over rice.
