Worthy of a Special Occasion

Prep: 15 min., Bake: 20 min. Use your favorite brand of chips in this dish.

Cook Time: 20 minutes
Yield: Makes 4 servings

Ingredients

  • 1  pound  chicken breast tenders
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  pepper
  • 1/3  cup  all-purpose flour
  • 1/2  teaspoon  dried oregano
  • 1/2  teaspoon  chili powder
  • 1/4  teaspoon  ground cumin
  • 2  large eggs
  • 2  garlic cloves, pressed
  • Vegetable cooking spray
  • 2  cups  crushed tortilla chips
  • Pineapple-Kiwi Salsa (optional)

Preparation

1. Preheat oven to 425°. Sprinkle chicken with salt and pepper.

2. Stir together 1/3 cup flour and next 3 ingredients.

3. Whisk eggs just until foamy, and stir in pressed garlic.

4. Place a wire rack coated with cooking spray in a 15- x 10-inch jelly-roll pan.

5. Dredge chicken tenders in flour mixture, shaking off excess; dip in egg mixture, and dredge in crushed tortilla chips. Lightly coat chicken on each side with cooking spray; arrange chicken on wire rack.

6. Bake at 425° for 18 to 20 minutes or until golden brown and done, turning once after 12 minutes. Serve with Pineapple-Kiwi Salsa, if desired.

Great recipe. I doubled the seasonings and added 1/2 tsp of garlic powder to flour. Used eggbeaters and tortilla chip crumbs from 2 bags I have been saving for some recipe like this. Was crispy like real fried chicken. I used FRANK'S HOT SAUCE as a dip and they were just like Boneless Buffalo Wings. I am going to cut the chicken into smaller strips and make them for tailgating at the Oregon-Oregon State (boo) fball game on 12-3-09. Served with mushroom, green onion and buttermilk mashed potatoes and sauted spinach and garlic.11/28/09

This is my family's favorite chicken recipe! I've even made it for company and they enjoyed it. It's really delicious and fairly easy to make. I do alter the recipe a little...using multi-grain tortilla chips, and using 3 egg whites rather than 2 whole eggs. Also, I don't make the salsa to go with it, but instead serve it with either a corn pudding, or a corn and tomato salad.07/17/09
