Salmon with Orange Marmalade
"When I ran out of orange juice, I substituted marmalade in a broiled salmon recipe I've been making for years. It turned out to be the best salmon I ever had." -Gail Sheriff, Fairfield, CT
Yield: 4 servings (serving size: about 4 1/2 ounces)
Ingredients
- 1/4 cup orange marmalade
- 2 tablespoons low-sodium soy sauce
- 2 garlic cloves, minced
- 1 (1 1/2-pound) salmon fillet
- 1/4 teaspoon salt
Preparation
Preheat oven to 400°.
Combine first 3 ingredients, stirring with a whisk. Place salmon on rack of a broiler pan lined with foil; sprinkle fish evenly with salt. Spread half of marmalade mixture over fish. Bake at 400° for 18 minutes or until fish flakes easily when tested with a fork. Remove from oven. Spread remaining marmalade mixture evenly over fish.
Preheat broiler.
Broil fish 3 minutes or until topping browns.

I stumbled on this last night when I realized I didn't have a key ingredient for the salmon recipe I usually make. This was light-tasting and delicious - way better than you'd guess from the simplicity of the recipe. Quick and easy enough for a weeknight meal but I wouldn't hesitate to serve it to company either. I love this recipe and have made it many times. If I'm home alone, I just use a 4-ounce piece and bake for only 10 minutes, and even with the larger portion, I only bake about 14 minutes. Had this tonight with sweet potato fries (baked right next to the salmon, and cherry tomatoes sauted with shallots.01/16/09
