Good, Solid Recipe

Prep: 15 min., Bake: 30 min. Baking caramelizes the sugars in this so-good-for-you vegetable, adding delicious flavor.

Yield: Makes 4 servings

Ingredients

  • 2  tablespoons  olive oil
  • 1  head cauliflower (about 1 1/2 lb.)
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  pepper

Preparation

1. Preheat oven to 425°. Drizzle a 15- x 10-inch jelly-roll pan with 1 Tbsp. olive oil. Cut cauliflower vertically into 1/4-inch-thick slices. Arrange in a single layer on prepared pan. Drizzle cauliflower with remaining olive oil; sprinkle with salt and pepper.

2. Bake at 425° for 25 to 30 minutes or until golden brown. Sprinkle with salt to taste.

ZERO stars. I LIKE cauliflower and hated this. Took too long for something just "so, what?" Husband hated it, daughter wouldn't touch it. I threw the rest of it out since I couldn't face it as leftovers. We don't throw much out. Right in the trash.09/08/09
