Yield: 4 cups (serving size: about 2 tablespoons)

Ingredients

  • Traditional Hummus
  • 1/2  cup  (2 ounces) crumbled reduced-fat feta cheese
  • 1/4  cup  chopped fresh parsley
  • 1/2  teaspoon  ground cumin
  • Cooking spray
  • 1/2  cup  (2 ounces) crumbled reduced-fat feta cheese
  • Garnish: parsley sprigs

Preparation

1. Combine Traditional Hummus, 1/2 cup crumbled feta cheese, chopped fresh parsley, and cumin. Transfer mixture to an 8-inch square baking dish coated with cooking spray. Sprinkle with 1/2 cup crumbled feta cheese. Bake at 400° for 25 minutes or until lightly browned. Garnish with parsley sprigs.

I made this without baking. I liked the flavors, but not as much as the spicy red pepper hummus from the same issue. I will be serving both at my birthday cocktail party.11/03/08
