Mix this versatile Middle Eastern spice blend with olive oil (1/4 cup Za'atar to 1/2 cup oil) for a zesty dipping sauce for breads. Use it as a rub for roast poultry, or stir into rice or couscous. Za'atar enlivens plain yogurt drizzled with olive oil for a tasty vegetable dip. Check Mediterranean grocery stores for tart ground sumac, the characteristic spice of Za'atar.

Yield: 1/2 cup (serving size: 1/4 teaspoon)

Ingredients

  • 1/4  cup  ground sumac
  • 2  tablespoons  dried thyme
  • 2  tablespoons  dried oregano
  • 1  tablespoon  toasted sesame seeds
  • 1  teaspoon  kosher salt

Preparation

1. Combine all ingredients in a small bowl. Store in an airtight container.
