Worthy of a Special Occasion

Call ahead to order tenderloins from the butcher, who can trim the steaks to your specifications. Depending on the size of your grill pan, you may need to cook the steaks in batches.

Yield: 10 servings (serving size: 1 steak)

Ingredients

  • 1/4  cup  bourbon
  • 2  tablespoons  dark brown sugar
  • 1  tablespoon  Worcestershire sauce
  • 1/2  teaspoon  ground cumin
  • 3  garlic cloves, minced
  • 10  (4-ounce) beef tenderloin steaks, trimmed (1 1/4 inches thick)
  • 1  teaspoon  kosher salt
  • 1/2  teaspoon  freshly ground black pepper
  • Cooking spray

Preparation

1. Combine first 5 ingredients in a large zip-top plastic bag. Add beef to bag; seal. Marinate in refrigerator at least 2 hours, turning bag occasionally.

2. Remove beef from bag; discard marinade. Sprinkle beef evenly with salt and pepper. Heat a large cast-iron grill pan over medium-high heat. Coat pan with cooking spray. Add beef to pan; cook 4 minutes on each side or until desired degree of doneness.

This is a good recipe. We grilled the steaks. The marinade flavor comes through but this is not a wow recipe. I made enough marinade for a recipe for 4 for 2 steaks.06/23/09

We had this last night for dinner and it was delicious. We made it exactly as the recipe reads except that we used a thick cut sirloin instead of tenderloin. The flavor was just a little sweet with just a tiny bit of heat to make it interesting. Lots of really good flavors blending together in this one. We grilled over hardwood charcoal. This will definitely be repeated this summer. Served with a tomato salad with whole milk mozzarella slices and fresh basil, olive oil salt and fresh cracked pepper and a baked potato. Good and easy!06/07/09
