Worthy of a Special Occasion

A hot beverage is often just what we want in cold weather or at the onset of a bout of cold or flu. This hot drink offers warm spice with cloves and sweet cinnamon. Substitute 1/3 cup rum for the apple cider if you'd like an alcoholic version.

Yield: 7 servings (serving size: 1/2 cup)

Ingredients

  • 8  whole cloves
  • 2  (3-inch) cinnamon sticks
  • 3  cups  pomegranate juice
  • 1/2  cup  apple cider
  • 1/3  cup  honey
  • Thin tangerine slices (optional)
  • Cinnamon sticks (optional)

Preparation

1. Place cloves and 2 cinnamon sticks on a double layer of cheesecloth. Gather edges of cheesecloth together; tie securely. Combine cheesecloth bag, pomegranate juice, apple cider, and honey in a medium saucepan; bring to a simmer. Cover, reduce heat, and cook 30 minutes. Remove from heat; discard cheesecloth bag. Garnish beverages with tangerine slices and cinnamon sticks, if desired. Serve warm.

We made this with the rum . . . and a scoop of honey ice cream . . . it really hit the spot! Four stars? Yes! Worthy of a special occasion? Sure - but also for every day! (well, maybe not every day!)12/09/08
