Yield: Makes 2 cups (serving size: 1/3 cup)

Ingredients

  • 1  medium-size sweet onion, thinly sliced
  • 1/2  teaspoon  sugar
  • 1  teaspoon  canola oil
  • 1  garlic clove, pressed
  • 1  cup  plain low-fat yogurt
  • 1/2  cup  light sour cream
  • 1/4  cup  crumbled feta cheese
  • 1  tablespoon  chopped fresh parsley
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  pepper

Preparation

1. Cook onion and sugar in hot oil in a large nonstick skillet over medium-low heat, stirring often, 15 to 20 minutes or until onions are caramel colored. Stir in garlic, and cook 1 more minute. Let cool 5 minutes; chop onions.

2. Stir together caramelized onion mixture, yogurt, and remaining ingredients in a medium bowl. Cover and chill 30 minutes or until ready to serve.
