Creamy Buttermilk-Avocado Sauce

Yield: Makes about 1 2/3 cups
Ingredients
- 1 cup buttermilk
- 1 ripe avocado, chopped
- 2 tablespoons chopped fresh parsley
- 2 finely chopped green onions
- 2 tablespoons fresh lemon juice
- Kosher salt and freshly ground pepper to taste
Preparation
1. Process buttermilk, avocado, parsley, chopped green onions, and fresh lemon juice in a food processor 30 seconds or until smooth. Season with kosher salt and freshly ground pepper to taste. Store in refrigerator covered with plastic wrap directly on surface (to prevent discoloration) up to 2 days.

I used two avocados for a more pronounced flavor. This would also make a great condiment for grilled shrimp. Yummy!01/17/10

The Creamy Buttermilk-Acocado Sauce is delicious! Just when I thought I had to give up good food to lose weight - I found this recipe! With half the calories of most light dressing, and with protein, calcium, and healthy fat - I may never use oil to make a dressing again. Today when I made it, I used cilantro instead of parsley and lime juice instead of lemon juice. It is awesome to spread on a shrimp or chicken wrap with spinach and red pepper!
