Outstanding

Add liqueur to this jam for flavor that's reminiscent of an old-fashioned cordial. If you prefer, substitute 2 tablespoons black currant syrup plus 1 tablespoon fresh lemon juice for the liqueur. Keep this refrigerated for up to one month.

Yield: 16 servings (serving size: 2 tablespoons)

Ingredients

  • 6  cups  chopped strawberries (about 1 1/2 pounds)
  • 1  cup  sugar
  • 3  tablespoons  crème de cassis (black currant–flavored liqueur)
  • 1  tablespoon  water
  • 1/8  teaspoon  ground cinnamon
  • 1/8  teaspoon  ground cardamom

Preparation

1. Combine all ingredients in a medium saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer until reduced to 2 cups (about 1 hour and 10 minutes), stirring occasionally. Cool completely; cover and chill 8 hours.

This jam is so good! The creme de cassis adds such a wonderful flavor. I've been eating it every morning on toast or mixed in with plain yogurt. It was so easy to make. Will definitely make again.05/13/09

I served this jam over thick greek yogurt and it was delicious! I substituted Splenda for the sugar - which really reduced the calories & still tasted great.05/05/09
