Classic Vinaigrette

Ingredients
- 1 1/2 tablespoons red wine vinegar
- 1 tablespoon chopped shallots
- 1/4 teaspoon salt
- 1 tablespoon Dijon mustard
- 1/8 teaspoon pepper
- 3 tablespoons extra-virgin olive oil
Preparation
Combine vinegar, shallots, salt, Dijon mustard, and pepper. Gradually add olive oil, stirring until incorporated.

This is such a great base recipe, with so many possibilities. Seasoned rice vinegars, for example, can add all kinds of nuances. For this recipe, I also like to add a bit of minced garlic, however, it must be used the same day.06/24/09
