Outstanding

Sweet, spicy, and definitely juicy, this shrimp recipe brings the flavor of the Caribbean from the grill to the table in no time. Serve a refreshing fruit salsa on the side to tame the fiery spice of the shrimp.

Yield: 4 servings (serving size: 2 skewers)

Ingredients

  • 1  tablespoon  sugar
  • 1  tablespoon  paprika
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  garlic powder
  • 1/2  teaspoon  ground red pepper
  • 1/4  teaspoon  ground thyme
  • 1/8  teaspoon  ground allspice
  • 2  tablespoons  olive oil
  • 1 1/2  pounds  peeled and deveined large shrimp
  • Cooking spray

Preparation

1. Prepare grill to medium-high heat.

2. Combine first 7 ingredients. Combine oil and shrimp in a large bowl; toss well to coat. Sprinkle spice mixture over shrimp; toss to coat. Thread shrimp evenly onto 8 (8-inch) skewers. Place skewers on a grill rack coated with cooking spray; grill 6 minutes or until done, turning once.

Fruit salsa: Combine 2 cups chopped fresh pineapple, 1/2 cup chopped cucumber, 1/2 cup vertically sliced red onion, 2 tablespoons chopped fresh cilantro, and 2 teaspoons cider vinegar.

I really enjoy this dish and have made it several times, however never on the grill. I'm sure it would be great on the grill, but I've just sauteed them in a pan, covered. I'm allergic to pineapple, so I avoid the fruit salsa. I'll usually serve this over a salad or rice depending on my mood. Definitely worth a try and definitely worth the time peeling the shrimp! I've made it several times and shared it with people at work, who thought it was fantastic. A few days ago I made it using smoked paprika, which didn't do anything for it. The other spices are too intense. I will try subbing chipotle chile and ancho chili powder in place of the cayene, but I don't expect they will improve on the flavor. I just always want to try to improve really great recipes.12/19/09
