Good, Solid Recipe

Time: 2 hours. Homemade tomato sauce makes the tastiest pizza. Let it cook slow and long for the thickest results.

This recipe goes with Margherita Pizza

Yield: Makes 1 cup (serving size: 2 tbsp.)

Ingredients

  • 1  tablespoon  olive oil
  • 1  tablespoon  minced garlic
  • 4  large red tomatoes (2 lbs. total), chopped
  • 1  teaspoon  sugar
  • 1/4  teaspoon  red chile flakes
  • 1/2  teaspoon  kosher salt
  • 1/2  teaspoon  freshly ground black pepper
  • 1  tablespoon  chopped fresh oregano leaves

Preparation

Heat oil in a saucepan over medium heat. Add garlic and cook, stirring, until fragrant, about 1 minute. Stir in tomatoes, sugar, chile flakes, salt, and pepper. Bring mixture to a boil, then reduce heat to low and simmer, stirring often, until very thick, about 1 1/2 hours. Stir in oregano.

Makes great pizza sauce. I would definitely make it again. I added a few chopped, dried tomatoes to give it plenty of body and flavor. A good way to get rid of those extra tomatoes that are a little over ripe. Would be great over pasta, too. The longer you cook it the thicker it gets.09/04/09
