If the citizens of Altoona, Pennsylvania, want to adopt our world-class variation on this classic café sandwich, we grant them full latitude.

Yield: 2 servings (serving size: 2 muffin halves)

Ingredients

  • 1/2  cup  drained canned artichoke hearts, finely chopped
  • 1/4  cup  sliced green onions
  • 1  tablespoon  fresh lemon juice
  • 1  teaspoon  olive oil
  • 1/2  teaspoon  dried oregano
  • 1/8  teaspoon  black pepper
  • 1/8  teaspoon  ground red pepper
  • 1  (6-ounce) can albacore tuna in water, lightly drained and flaked
  • 2  English muffins, split and toasted
  • 6  tablespoons  (1 1/2 ounces) grated provolone cheese

Preparation

Preheat broiler.

Combine first 8 ingredients in a medium bowl. Divide evenly among muffin halves; sprinkle with cheese. Place on a baking sheet; broil 5 inches from heat for 4 minutes or until golden brown.

This was surprisingly good. The other ingredients give a lot of flavor and would be a good choice for people who aren't overly fond of tuna. P.S. I think that giving a recipe a lower number of stars because it's not a "company dish" is silly. Who would expect a tuna melt to be a special occasion meal anyway? Besides, I think it would be QUITE appropriate for a casual lunch for friends.01/09/08

Three stars only because I wouldn't serve it to company. But a delicious hot sandwich and pantry meal. I used 100 Calorie Thomas English muffins to boost the fiber. Added extra lemon juice. Used shredded Mexican cheese. I will make this again in a pinch.10/23/07
