I liked this soup very much. Tastes great on a cold day, and I plan to make it again. Stewed tomatoes are difficuilt to find in the country that I live, so I used a can of chopped tomatoes seasoned with olive. At first, It didn't seem like it had very much pasta so I added a 1/4 cup more and when it was finished I discovered that I probably shouldn't have because it became very hearty. I garnished the soup with shredded parmesan cheese and chopped fresh basil. Served it with garlic bread.09/20/07

This is the first time I made a minstrone soup, but I'm big on simple recipes. This was definitely the simplest minstrone I found around the internet! I did make a few changes: increased the water to 8 cups and since we're a big noodle family, I added 2 cups of the uncooked pasta. While it turned out to be more of a 'stew', it still tasted great and one bowl was very filling!03/30/07
