Ingredients

  • 2  tablespoons  minced shallots
  • 1  tablespoon  chopped fresh or 1 teaspoon dried thyme
  • 3  tablespoons  honey
  • 1  tablespoon  Dijon mustard
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  ground red pepper
  • 4  (6-ounce) salmon fillets (about 1 inch thick)
  • Cooking spray
  • Thyme sprigs (optional)

Preparation

Prepare grill or broiler.

Combine first 6 ingredients in a small bowl. Brush honey mixture over skinless side of fish. Place fish on a grill rack or broiler pan coated with cooking spray, and cook 6 minutes on each side or until fish flakes easily when tested with a fork. Garnish with thyme sprigs, if desired.

This is probably my favorite salmon recipe to date and went together in no time...the perfect quick dinner. The sauce appropriately blends sweet with spicy and delicate with bold. It stands up well to and complements the salmon. The sauce would probably also work well on chicken or vegetables.08/12/08
