Ingredients

  • 3  tablespoons  Dijon mustard
  • 3  tablespoons  maple syrup
  • 1  tablespoon  balsamic vinegar
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  freshly ground black pepper
  • 4  (6-ounce) salmon fillets (about 1 inch thick)
  • Cooking spray

Preparation

Combine first 5 ingredients in a large zip-top plastic bag; add salmon. Seal and marinate in refrigerator 20 minutes.

Prepare grill or broiler.

Remove salmon from bag, reserving the marinade. Place salmon on a grill rack or broiler pan coated with cooking spray, and cook for 6 minutes on each side or until the fish flakes easily when tested with a fork; baste salmon occasionally with the reserved marinade.

This recipe was OK...it was a little TOO mustardy for me as this was all I could taste along with the balsalmic vinegar as well. Maybe nextime I'll reduce the mustard by half.....01/25/10

Second time making this -- fantastic! The first time, I served with couscous and brussels, this time with Parmesan rice and sauteed veggies. This time, since I had a smaller piece of salmon than was called for, I also broiled some peeled tail-on shrimp which had marinated in the sauce. They were as good or better. Very versatile and quick for a weeknight.01/22/09
