When served with tortilla chips, this chow chow makes a tasty substitute for salsa.

Yield: 14 servings (serving size: 1/2 cup)

Ingredients

  • 2  cups  chopped seeded tomato
  • 1  cup  chopped onion
  • 1  cup  chopped green bell pepper
  • 1  cup  chopped red bell pepper
  • 1/4  cup  chopped fresh cilantro
  • 3  tablespoons  fresh lime juice
  • 2  tablespoons  white vinegar
  • 2  teaspoons  finely chopped seeded serrano chile
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  pepper
  • 1  (15-ounce) can black-eyed peas, drained

Preparation

Combine all ingredients in a large bowl, and stir well. Cover and chill at least 1 hour.

This has been a huge hit every time i have made it. I add about 1 cup thawed frozen corn and an entire serrano for a little kick. It makes a huge bowl of salsa that disappears quickly!11/30/07
