Worthy of a Special Occasion

Yield: 4 servings (serving size: 3/4 cup gnocchi and about 3/4 cup sauce)

Ingredients

  • 1  (16-ounce) box vacuum-packed gnocchi with potato (such as Bellino)
  • 2  teaspoons  olive oil
  • 1/2  cup  chopped onion
  • 2  tablespoons  minced garlic
  • 2 1/2  cups  canned crushed tomatoes, undrained
  • 2  (6 1/2-ounce) cans chopped clams, drained
  • 1/2  cup  chopped fresh basil

Preparation

Prepare gnocchi according to package directions, omitting salt.

While the gnocchi are cooking, heat oil in a large nonstick skillet over medium heat. Add onion and garlic; cook 5 minutes or until soft, stirring frequently. Stir in tomatoes and clams. Bring to a boil; reduce heat, and simmer 10 minutes or until thick. Stir basil into sauce; cook 30 seconds. Serve over the gnocchi.

This was so much easier than I anticipated and I just loved it. My friend came over to dine as well and we were both pleasantly surprised and it was the perfect amount of food. I served it with a lite caesar salad. Yum! Two thumbs up!01/31/07

We loved this! Super easy to put together (<30 mintues total) and VERY tasty. I don't think I used quite the 2 TBSP Garlic (I used 6 small cloves) but it was quite garlicky but SO GOOD. This is a keeper!06/13/06
