Compared to a commercial curry powder, this one is dark, slightly bitter, and salt-free. All the ingredients in this version are available at most supermarkets, except the fenugreek seeds, which you can find in Indian and Middle Eastern markets.

Yield: 1/4 cup

Ingredients

  • 1 1/2  tablespoons  coriander seeds
  • 1  teaspoon  cumin seeds
  • 1  teaspoon  yellow mustard seeds
  • 1  teaspoon  fenugreek seeds
  • 1  teaspoon  white peppercorns
  • 6  whole cloves
  • 1  tablespoon  ground turmeric
  • 1  teaspoon  ground red pepper

Preparation

Combine the first 6 ingredients in a spice or coffee grinder, and process until finely ground. Place the spice mixture in a small bowl; stir in the turmeric and red pepper. Store in an airtight container.
