Individual Chocolate Mousse Cakes

Ingredients
- 1 1/4 cups sugar, divided
- 1/2 cup unsweetened cocoa
- 2 tablespoons all-purpose flour
- 1/8 teaspoon salt
- 3/4 cup water
- 5 ounces bittersweet chocolate, finely chopped
- 1 tablespoon dark rum
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 large egg white
- Cooking spray
Preparation
Preheat oven to 350°.
Combine 3/4 cup sugar, cocoa, flour, and salt in a small saucepan. Add water; stir well with a whisk. Bring to a simmer over medium heat; cook 2 minutes, stirring constantly. Place chopped chocolate in a large bowl. Pour hot cocoa mixture over chocolate; stir until chocolate melts. Stir in the rum and vanilla.
Place 1/2 cup sugar, eggs, and egg white in a bowl; beat with a mixer at high speed for 6 minutes. Gently fold the egg mixture into chocolate mixture.
Divide chocolate mixture evenly among 10 (4-ounce) ramekins coated with cooking spray. Place ramekins in a 13 x 9-inch baking pan; add hot water to pan to a depth of 1 inch. Bake at 350° for 25 minutes or until puffy and set. Serve warm.

Amazing. With the crust on top, it's like a cross between a chocolate custard and a creme brulee. Instantly addictive! Easy yet elegant. I was short on a bit of the cocoa, so I used 1/2 ounce more bittersweet chocolate. And I didn't have that many ramekins so I prepared two individual servings, poured the rest into a 1.5-qt. round Pyrex dish and baked it for an extra 15 minutes. I may try less sugar next time, but I will definitely be making this again and I would absolutely serve this to company.01/12/08
