Good, Solid Recipe

Yield: Makes 4 to 6 servings

Ingredients

  • 1 1/2  cups  buttermilk
  • 1  large egg
  • 2  cups  saltine cracker crumbs (2 sleeves)
  • 1 1/2  cups  all-purpose flour
  • 1  teaspoon  salt
  • 1  pound  fresh okra, cut in half lengthwise
  • Peanut oil

Preparation

Stir together buttermilk and egg. Combine cracker crumbs, flour, and salt. Dip okra pieces in buttermilk mixture; dredge in cracker crumb mixture.

Pour oil to a depth of 2 inches into a Dutch oven or cast-iron skillet; heat to 375°. Fry okra, in 3 batches, 2 minutes or until golden, turning once. Drain on paper towels.

I've been looking for a good recipe for frying whole okra and loved this one. Batter is actually very light. Buttermilk is a nice touch.10/28/08

Fried Okra ... are you kiddin' me! I'm not sure what you are trying to cook, but it is not country fried okra. There is a ridiculously large amount of liquid and dry ingredients for the amount of okra. Fried okra is an extremely simple dish and if you want to cook it ignore this monstrosity and try this: Okra - at least a pound washed and , cut into pieces (crosswise!! ). Place okra piece into a gallon zip lock bag, large bowl or other container ( I personally like the zip lock bags ... less mess!). Season with salt and pepper. Corn Meal - Add corn meal to the okra Gently shake the bag to coat each piece with corn meal -- add additional corn meal if necessary. Fry in a skillet of hot oil ( approximate 375 degrees, with 1-2 inches of oil) until golden brown. Drain on paper towels and serve hot .... if you can get it to the table. ( My children usually wait by the frying pan and gobble it up as soon as its cooked) Note: Don't over crowed the skillet I like to let the okra rest in the bag about half an hour before frying or even overnight if I'm working ahead.08/09/06
